I imagined that what his gauntlet covers is not a cut-off arm, but rather horrible JENOVA pustules, where his flesh exploded semi-tenticularly, and out of sympathy (ie, to stop convalescent Vincent chewing his own arm off, which made JENOVA cells multiply as they raced to heal the wounds, which made Vincent chew his arm off almost literally going insane with hate for flesh-not-his-flesh) Hojo covered the whole limb with steel.
